I’ve always been a fan of a good gilled chicken sandwich, but have never quite been able to make the mark at home until NOW. In today’s post, I will let you in on my secret marinade that will give you the BEST grilled chicken sandwich you’ve ever had all made at HOME!

What is the secret to a good grilled chicken sandwich?
What’s the secret you ask? Well aside from really good ingredients, the real secret to a good grilled chicken sandwich is the marinade for the chicken! A good marinade not only gives you great flavor, but also keeps your chicken super juicy when you cook it on the grill. There is nothing worse than dry chicken and my secret marinade will give you perfectly juicy and delicious chicken every time!
How do I make this secret marinade for juicy grilled chicken?!
My secret marinade is nothing complicated but makes all the difference in the world when you are grilling chicken. I came up with this marinade one day on a whim simply using things that I already had on hand in my fridge and pantry. All you need to make my marinade is olive oil, Worcestershire sauce, old style mustard, maple syrup or honey (I love using Tree Hive’s Maple Syrup + Honey linked below), minced garlic, and dried parsley. All that I do is add it to a ziplock bag or container with my chicken and let it sit for at least one hour or over night! Check out the recipe card at the end of this post for exact measurements!
What type of chicken should I use?
I have made this grilled chicken sandwich with both chicken thighs and chicken breasts, but we prefer the chicken breasts hands down. I split the chicken breasts in half lengthwise to make it into two thin pieces of chicken. Doing this helps all of the chicken to cook evenly at the same time and makes it easier to eat on a bun.
How do I grill my marinated chicken?
I like to heat our gas grill up to about 500 degrees. Once the grill is nice and hot, I simply add my marinated split chicken breasts. I let the chicken cook on the first side for about 4 minutes with the lid closed before flipping. After 4 minutes, I flip the chicken and cook for an additional 3-4 minutes or until the internal temperature reaches 165 degrees. I like to add a slice of provolone cheese once the chicken is cooked and let it melt nicely before removing the chicken to a platter to cool.
How do I construct my grilled chicken sandwich?
The construction of a grilled chicken sandwich can be extremely controversial. In my opinion, however, this is the best way to construct the perfect grilled chicken sandwich! I believe that the best vehicle for a perfectly grilled piece of chicken is a toasted brioche bun. They are so buttery and soft and just add a nice touch to the sandwich. I use butter lettuce for a little green on the sandwich and love to use Trader Joe’s Incredisauce (linked below) for an added punch of flavor. Last but not least, I love adding hamburger dills for a little added crunch and kick of flavor. Now, if you’re feeling extra crazy, throw on a couple of slices of bacon and you’ve got yourself a real treat!

Meggie Claire's Secret Chicken Marinade Recipe
This is my "secret sauce" if you will for grilled chicken! This marinade will give you the juiciest grilled chicken you could ask for and will have you coming back for more time and again!
Ingredients
- 3 TBSP Extra Virgin Olive Oil
- 2 TBSP Worcestershire Sauce
- 1 TBSP Honey or Maple Syrup
- 1 tsp Old Style Mustard
- 1 tsp Minced Garlic
- 1 TBSP Dried Parsley
Instructions
- Combine all ingredients in a container with a lid or a ziplock bag.
- Marinate meat for at least one hour or up to overnight.
- Grill and serve!
